Our Bordeaux blend is dominated by Cabernet Sauvignon and comprises all
five varietals (Merlot, Petit Verdot, Cabernet franc and Malbec). We finalise
the blend before the wine goes into French oak (Foudres - 6000L wooden
vats; 1st, 2nd and 3rd fill barriques – 225Ls). This ensures a beautiful “marriage”
between the different varietals over a 24 month period in oak. Post
bottling, we then cellar the wine for a further 12-18 months before the wine
is released onto the market. Our aim is to create a wine that showcases bright
red and purple fruit such as raspberries and blueberries; savoury notes; dried
herbs (oregano and rosemary). On the palate this wine presents a generous
offering from entrance to finish; supple and full without over-saturating the
palate with tannin; persistent with good length. The wine has a healthy core,
coiled up and waiting to be released over time, whether it be in your cellar,
your decanter, or your glass. These wines will age for 7 years and beyond,
provided stored under optimum conditions
